Both SW inputs should work in this setup! I assume one input is faulty. Please open a ticket or return the Shelly.

A Shelly Plug S or Plug (depends on the wattage of the VASCO unit) is a good solution to switch the whole thing off!
But the remaining issue is the inhibit of switching both L2 ans L3 to L1! This could be done via software: An action in each of the Shelly 1 could switch the other off, if its own output ii switched on. Please have a look in the forum‘s lexicon section for a description of DDD commands.

Not sure if its possible cuz when L1, L2, L3 are 'open' --> lowest power is used. Don't think its possible to shut it down by this. Or am I wrong?
No, I think the unit has to be completely separated from mains network for a shut-down. Please have a look at my sketch in post # 13.

If it’s desired and allowed, the whole VASCO unit could be switched on/off by a third Shelly 1:

But you should check in prior if the unit is built for frequent power cycles!

Obviously, it is not possible to switch the ventilation unit with live potential at the L1 terminal! Possibly, the unit will be damaged if this would happen. The conclusion:
(a) A Shelly for switching the unit on/off is omitted.
(b) Thus, only two Shellies are used - for switching to middle and high position.

If live potential has to be connected to pin L1 to turn the ventilator on, your sketch is fine! But I would recommend to wire the „I“ terminals of the Shelly in the middle and in the right to L1. Don’t know what happens if L2 and/or L3 are powered without powering L1! With my recommendation, you would avoid faulty situations…

Your diagram shorts permanently pins L1, L2 and L3. Thus, functionality has gone…
Due to the fact, you want to control 4 possible states: O=off, 1=low, 2=middle, 3=high, you need at least two dry contacts and a central on/off switch. But the Shelly 2.5 doesn’t have dry contacts!
I would recommend
(A) a Shelly pro 2 (two separate dry contacts for the intensity) and a Shelly pro 1 (to switch the ventilation on/off), or
(B) three Shelly 1 (two for the intensity, another to switch on/off).
(A) has the merit to be mountable on a DIN rail - but is more expensive than (B).

Wenn die Betriebsanzeige am Shelly UNI während des Klingelns erlischt, ist das ein Zeichen dafür, daß die Betriebsspannung zusammenbricht! Messen ist angesagt, wie Eulhofer bereits andeutet hat!

Good item in a perspective of efficiency and economy!
If you don't need energy metering for the 3-phase pump, you may switch on/off the (required!) contactor with a simple Shelly 1 or Shelly pro 1 (montable on a DIN rail and with LAN-Socket)). This Shelly switches in parallel also the Aseko unit.
IIRC, your Shelly plant for the pool is equipped with pro-series only (1x Shelly pro 1PM and 1x Shelly pro 1), which are fully equipped with LAN sockets.

Perfect! Hence, the Aseko unit may be supplied (and switched) in parallel to the coil of the contactor.
The Shelly EM is quite good in energy metering, but is (like the Shelly 3EM) suited to switch contactor coils. Due to the fact its relay is capable to switch max. 2 A current (approximately 400 W), the Shelly EM is not able to switch larger applications.
