I'm thinking about buying a Shelly Pro 4PM V2, and I guess I'll have to reboot it from time to time for stability reasons.
My question is, does the Shelly Pro 4PM V2 keep its outputs state while rebooting? I mean, if outputs 1 and 2 are ON and I reboot Shelly, will these outputs stay ON while rebooting, or does a reboot force all the outputs to be OFF during the reboot?

I have a Pro4PM, it's relatively early days (one month) but it's been solid so far, I don't anticipate having to expressly reboot it for fear of it locking up/etc. Whilst it's not perfect, it is a big step up from the cheap garbage.
As to your question, the 'restored' state is as apreick noted; those settings are acted on once the Shelly has completed its reboot. Up until that point the relays stay as they were.
i.e. click reboot > relay states do not change (what was on stays on, off stays off) > as soon as the device has newly booted, the "Last Mode" settings are enacted.
