    I have 3 lights, each with their own switch. However I only want to control a single switch/light.

    How would you wire a Shelly1 in my attached wiring schematic to only control 'light 3'?

    Hello, just ignore switch 1+2 and light 1+2 and wire switch 3 and light 3 according to the schematics in lexikon/encyclopedia here. The Shelly can be mounted behind switch 3, you need access to N line.
