Depends on the power your water heater is consuming. Shelly Ogemray 25A could handle up to 25A current.
Normal Shellies typically can handle a maximum of 10A.
ATTENTION:
In most installations the bimetall switch is a combination of temperatur regulation switch and a safety switch. Never ever remove or disconnect the safety switch. A shelly is NO safity equipment and might fail. If the heater continous to operate water can reach boiling point and if the safety water walve has a malfunction or cannot handle the pressore of water steam in the very worts case the water heater could explode!
So I would suggest to leave the existing switch in operation and set it to maximum temperature. You can control the power connection to the water heater externally using a shelly (Ogemray, Shelly Plug or any Shelly providing the required current) and control temperature this way withput extra risk.
